Gerty's Raspberry Caves

A lot of Swedes will have a dreamy look in their eyes - and think of lemonade, summer, beach and fun - when someone says Raspberry caves. The perfect cookie for a summer picknick on the beach!

30 pieces

200 g butter
1/2 cup sugar
1 1/2 cups wheat flour
1 tsp baking powder
small paper baking cups

FILLING

Raspberry jam
Melt the butter and mix with the rest of the ingredients. Shape into 0.8 inches balls. Place in small baking cups. Make a dip in each ball and fill with raspberry jam. Bake in the middle of the oven at 350ºF for 10-12 minutes.
